CAESAR SALAD RECIPE
200 g romaine lettuce
40 g parmesan cheese
1/2 chicken breast
HOW TO MAKE CAESAR SAUCE
The first thing we are going to do is find out how the Cesar sauce is made because there is no doubt that it is the differential touch of this salad, and on which it bases its popularity.
Caesar sauce ingredients :
50 g anchovies
Juice of half a lemon
1 teaspoon Dijon mustard
a teaspoon of Worcester Sauce
1 egg yolk
1/2 clove of garlic
Virgin or extra virgin olive oil
Put the egg yolk, Worcestershire sauce, mustard, lemon juice, anchovies and garlic clove in the blender glass.
Blend with the mixer while adding oil little by little until obtaining a sauce, with the texture of a mayonnaise. We reserve in the fridge.
CAESAR SALAD STEP BY STEP
Season the chicken breast and grill, reserve.
We wash the lettuce, you can use the variety that you like, but if you want to make the most typical, use romaine lettuce. We dry it and chop it finely.
We put the lettuce on the platter or plate, on top the breast cut into small pieces or strips, some bread croutons and a few pieces of Parmesan cheese.
Add a little sauce, mix and grate Parmesan cheese on top.
