Shrimp Scampi in Lemon Garlic Butter

  • Ingredients :

1 C Butter
½ C White Wine or White Cooking Wine
¼ C Lemon Juice (use fresh)
3 Garlic Cloves (minced)
1 T Garlic Salt
1 T Oil

Seasoning for shrimp: 2 tsp Salt & Pepper ONLY
Fresh herbs for taste: I used Cilantro, Chives & Oregano
1lb Shrimp (use Large peeled & deveined, keep shell on)

  • Directions :
  1. In a saucepan add oil. Cook shrimp on Med for 2 mins per side until opaque pink. They should not be fully cooked. Remove & set aside. Lower heat in pan to LOW.
  2. In same pan, melt butter over VERY LOW heat, to keep from burning. This may take some time. Once melted, add garlic. Raise heat to Med & cook 1 min. Next add your wine. Raise heat to Med High to bring to a boil. Whisk this constantly for a total of 2-3 minutes to let wine reduce in butter. Your sauce should begin thickening.
  3. Add your lemon juice & seasonings. Stir well. Color will begin to change to a bright yellow. Add your shrimp, lower heat to Med Low and let simmer stirring occasionally. Last I added more seasonings & herbs to taste!!
